C – K Premium Meat, featuring premium grain-fed and dry-aged beef from the Kirkman family farm, will open for business April 17 in Houston.

The business, situated at South Sam Houston Boulevard, will provide steaks, roasts and ground beef as well as pork chops, sausage, ham, bacon and other individual cuts of grain-fed pork raised in a natural environment. Pasture-raised poultry from a family-run farm will be available at the store beginning in May, and fresh milk from Memory Lane Dairy will also be sold.

The Kirkman family has raised cattle in Texas County since 1876. The fifth and sixth generations of the family continue the tradition of raising free-ranging animals in fields of clover and fescue. They have always eaten their own beef and are now ready to share their superior-tasting beef.

The Kirkmans say they improve taste by dry-aging the beef, which is hung in a cooler where humidity, temperature and air-circulation is closely monitored.

All beef and pork products will be processed at USDA inspected facilities. Poultry will be state-inspected for sale. All products will be frozen.

In addition to individual cuts of beef, pork and poultry, C – K will carry beef and pork bratwursts, jalapeno and cheddar bratwursts, meatloaf, jerky and snack sticks, all made from Kirkman family beef and pork.

The business is owned by Randy and Linda Kirkman, Jon and Rebecca Kirkman, and Scott and Randie Kirkman of Summersville, and Carol Kirkman Carr and husband, Terry Carr of Rogersville.

C – K will be open from 10 a.m. until 6 p.m. Thursdays and Fridays and 9 a.m. until 2 p.m. Saturdays. Quarters, halves and whole beef and whole pork will be available for sale at a discount.
